This is one of my first meads. This process you are going to boil and cool the water, dissolve the honey in the water as it cools and when you reach somewhere around 75F to 89F you can pitch your yeast in your must.
If you are in doubt on how to scale this it is in the range of 2 to 3 lbs of honey per gallon.
I will keep notes on this and I will tweak this as I go along. I also added yeast nutrients which I will have to add to my notes..
